I would like to see a 2-d or 3-d long/short term fuel knock correction function

IE: if the ECU continually sees knock or A/F out of alignment with given parameters the EMS will learn and correct, this function would aid non-tuners who cant jump on the dyno, and also aid in changeing VE of the motor that happens with time

Me to. it could be just great if the ems could handle simple adaptions to make a smoother part throttle during time.. cool
I was thinking about fuel adaption over time, like you describe and also the knock vs ign tabel. This could actually make the ems work almost like a stock ecu.
